  From the Japanese prefecture of Okinawa, this mellow tea is fast gaining popularity amongst the health-conscious. Okinawans drink more tea per capita and have the lowest obesity rate worldwide (less than 6%). This has led to many studies to see if the two are linked. This is a beautiful high grade leaf tea with a very smooth flavour and it can be re-infused a number of times. This tea has not been infused with jasmine like some Okinawan tea, rather it has been left in its pure green tea form. Many Japanese green teas have a bitter after-taste but this is not the case with our Okinawan Green Tea. It's mellow and sweet and brews to a bright green colour when infused.

  Extremly rare 1st flush Japanese Premium Gyokuro green tea.. Leaves of this green tea are picked around the eighty-eighth day from the beginning of spring, which are long-steamed first crops of tea that have excellent flavour and aroma. Gyokuro should be made at a mild temperature (50C to 60C) after the water is boiled, pour it into a cup first to cool the water slightly. About 1 minute later, pour the water onto the tea leaves to make the tea. Steep for 1 minute. Includes a Japanese washi (origarmi) tin.

  Young green tea leaves and white tea buds are hand rolled to create these delicate green and white tea spirals. Jade Halo has a clean, grassy aroma with light jasmine and honey overtones. The liquor is a pale green shade and the taste is very delicate, light and fresh. Use 4 or 5 halos per cup; however the halos can be re-used a number of times.   This is the tea of the Japanese Tea Ceremony. Uji match, which is from Kyoto, Japan.
  
  Young premium quality tea leaves are ground into powder form so that the tea can be whisked into a thick infusion.
  This high-quality Matcha (powdered Tencha green tea) is designed to prepare "usucha" (thin tea) for the Japanese tea ceremony. Produced by steaming, drying and grounding Gyokuro tea, the result is a deep emerald tea with a rich, subtle sweetness and layers of flavour.
  
  Brewing Recommendation: Put 2 teaspoons in a Matcha bowl and pour 4 tablespoons of hot water (65 C) over the tea. Whisk rapidly until a thin layer of foam appears.
  
  Matcha Tea can also be used in cooking and to create green tea ice cream. Other serving suggestions include ice tea, latte or milkshakes.

The second reason is that the leaves are so tightly compressed that they into life when added to water.
